2 fillets of white fish (tilapia, cod, or mahi-mahi)
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
Juice of 1 lime
1 cup cooked rice (white or brown)
1/2 cup black beans (drained and rinsed)
1/2 cup shredded cabbage or lettuce
1/4 cup diced tomatoes
1/4 cup diced avocado
1/4 cup sour cream or Greek yogurt
2 large flour tortillas
Fresh cilantro and hot sauce for garnish (optional)
Instructions:
Season and cook the fish – Rub the fish fillets with olive oil, chili powder, cumin, garlic powder, paprika, salt, and lime juice. Cook in a skillet over medium heat for 3-4 minutes per side until flaky.
Prepare the filling – Warm up the rice and black beans. Chop the tomatoes, avocado, and cabbage.
Assemble the burrito – Lay out a tortilla and spread a bit of sour cream or Greek yogurt. Add rice, black beans, cooked fish, cabbage, tomatoes, and avocado.
Wrap it up – Fold in the sides and roll tightly into a burrito.
