Ingredients:

For the shrimp:

  • 1 lb shrimp (peeled and deveined)

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Juice of 1 lime

For the cabbage slaw:

  • 2 cups shredded cabbage (green or purple)

  • 1/2 cup chopped cilantro

  • 1/4 cup red onion (thinly sliced)

  • 1 tbsp apple cider vinegar

  • 1 tbsp olive oil

  • 1 tsp honey or agave (optional)

  • Salt and pepper to taste

For the tacos:

  • 8 small soft corn or flour tortillas

  • Lime wedges for garnish

  • Avocado slices (optional)

  • Salsa or hot sauce (optional)

Instructions:

  1. Marinate the shrimp: In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, paprika, cumin, salt, pepper, and lime juice. Let it marinate for about 15 minutes.

  2. Prepare the slaw: In a separate bowl, combine shredded cabbage, cilantro, red onion, apple cider vinegar, olive oil, honey, salt, and pepper. Toss well and set aside to allow the flavors to meld.

  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque.

  4. Assemble the tacos: Warm the tortillas in a skillet or microwave. Then, place a spoonful of the cabbage slaw in the center of each tortilla. Top with cooked shrimp, and add avocado slices or salsa if desired.

  5. Serve: Garnish with lime wedges and serve immediately!

Enjoy your fresh, flavorful shrimp tacos! 🌮🍤
