Simple Cilantro Couscous

Ingredients:



  • 1 cup couscous

  • 1¼ cups chicken or vegetable broth

  • 1 tablespoon olive oil

  • ½ cup fresh cilantro, chopped

  • 2 tablespoons lemon juice

  • 1 garlic clove, minced (optional)

  • Salt and pepper to taste


Instructions:



  1. Bring broth to a boil in a small pot.

  2. Remove from heat, stir in couscous and olive oil, cover, and let sit for 5 minutes.

  3. Meanwhile, chop cilantro and mince garlic (if using).

  4. After 5 minutes, fluff couscous with a fork.

  5. Add cilantro, lemon juice, and garlic. Stir to combine.

  6. Season with salt and pepper to taste.

  7. Serve immediately as a side dish.
