
Ingredients:
- 1 cup couscous
- 1¼ cups chicken or vegetable broth
- 1 tablespoon olive oil
- ½ cup fresh cilantro, chopped
- 2 tablespoons lemon juice
- 1 garlic clove, minced (optional)
- Salt and pepper to taste
Instructions:
- Bring broth to a boil in a small pot.
- Remove from heat, stir in couscous and olive oil, cover, and let sit for 5 minutes.
- Meanwhile, chop cilantro and mince garlic (if using).
- After 5 minutes, fluff couscous with a fork.
- Add cilantro, lemon juice, and garlic. Stir to combine.
- Season with salt and pepper to taste.
- Serve immediately as a side dish.
