Tequila Onion Steak
1 medium onion,
sliced into rings
1⁄4 cup tequila
1 teaspoon salt
1 tablespoon fresh cilantro
3 garlic cloves
1⁄2 teaspoon black pepper
2 dried chipotle peppers
1 tomato
2 tablespoons olive oil
2 pounds top sirloin or
New York strip steak
1 teaspoon olive oil
Salt to taste
1. Place onions, tequila and salt in resealable food storage bag. Marinate in
refrigerator 2 hours.
2. Place cilantro and garlic in blender with pepper, chipotle peppers, tomato and
olive oil; purée until smooth. Pour mixture over meat. Marinate 2 hours.
3. Preheat grill to high. Remove steak from marinade; shake of excess. Lightly
coat both sides of each steak with oil. Sprinkle with salt. Sear steaks 4 to 5
minutes on each side or to desired doneness. When done, transfer to warmed
plater and allow to rest 2 to 3 minutes before slicing. Top with marinated
tequila onions.
